Thank you for all the suggestions, bit unfortunately quince is just too out of season I guess (didn't try Chinatown).
Erica, I needed the quince to make my own quince jam, but I took your suggestions and purchased a jar and I'm going to try and "fix it" a little to suit my taste.

It's not in season right now, so it might be hard to find. In the fall, I see them around JC at several of the Asian markets and at the Union Square Farmer's Mkt. (Not sure what you're using it for but you can get quince paste and quince jam at better supermarkets - awesome for cheese plates.)

I think I've seen it in Tender Shoots (or one of the other Asian Farmers Markets) on Newark and Grove near Grove Street PATH. If not, you'll probably have to make the trek to Chinatown.

Easy, you can find everything for a fried turkey at Shop Rite, Pathmark, or any other major supermarket. (but not the Cash and Carry)

NYC Cake Supply will have it - 56 W 22nd Street (really close to the PATH at 23rd). Their # is 212 675-2253 if you want to double-check before you go.

Or you might try Garden of Eden in Hoboken - I saw it at the one in Brooklyn once so it may be something they carry.

Also, Ikea usually has Swedish pearl sugar (not exactly the same but pretty close) if you're going to be there any time soon.

I want to make my own sugar waffles, so I'm looking for Belgian pearl sugar. I can crush sugar cubes if I have to, but it'd be nice to find the real stuff.

I've come to use Moloney's for my pork and beef, sometimes lamb. They are a true butcher, not just a meat market. The product is fresh and good quality (while not organic).

I recently bought 3 or 4 country ribs still together and roasted it in one piece. It was mouth-watering.

They would definitely have the bones, especially earlier in the day. I think they close at 5pm, on Saturdays anyway.

You might also try Moloney's at Five Corners close to the JSQ Path if you'd like to support a local place. I don't eat meat, but I got a lovely roast for guests there quite lately, and they're very nice folks. They also have fresh pasta and Italian bakery items, and someone there might be able to give you a few pointers for your sauce-making.

I don't know about places in downtown JC, but my favorite butcher shop is Florence Meat Market in the West Village, convenient to Christopher St. PATH. It's a tiny(!) place on Jones street near the intersection of West 4th. Since trying them out, I don't buy beef anywhere else.

I'd call ahead, but I'm sure they can get you exactly what you need.

You should be able to find them in a produce store on Newark ave, near Little india between the blvd and summit ave.Thats where I last purchased some chilis.

I wish I could help but like fiery Szechuan Chinese resaurants bland soon becomes the rule of thumb for Americanos.

Shop Rite used to carry those long dark green thin squggly ones that looked like a Mandarin's foot long gnarled fingernail...they were pretty hot.
But NOTHING compared to the banana peppers my mom used to grow...celery green turning to red...that had to be picked with gloves to avoid swollen beet red hands. Even cleaning out the seeds was dangerous; God forbid you rubbed your eye.

A lot of people do what you do, grow the old heirloom varieties and keep passing the seeds to those who like the taste of Hellfire.

Alas, all I have is a windowsill and a partner who thinks even BLACK pepper is too spicy .

Where can I find them?

I grow my own hot chili peppers in my garden, and my crop of nearly 1,000 peppers just ran out last week.

When shopping last week at ShopRite, I woefully noticed the lack of options for HOT peppers...which was the reason I decided to try my hand at growing them in the first place!

With so many unique ethnicities in this area, and NJ in general, many of whom enjoy nice spicy food, how are there not a better selection of very hot peppers at any of these stores? The peppers from my garden were from all corners of the world -- Mexico, Thailand, Belize, etc.

Anybody know a supermarket or produce store, preferably in Downtown JC, that has a good selection of very hot peppers?

I need me some capsaicin.

I've seen saffron at Shoprite in the spice section...the high priced spiced section as opposed to the inexpensive spice section. The saffron was in a glass jar.
