I asked them why they make the buyer pay in advance before they steam the lobsters. They said that some customers have ordered steamed lobsters and did not pick them up. They were stuck with lobsters that could not be sold causing the seafood dept to take a hefty loss.

I think the guys at Radical Wellness (3rd & Brunswick) might have some.

You could also try posting to the Jersey City Brew Club facebook group, I have a feeling some of the members in the club make Kombucha. We get questions about Kombucha mothers at our shop sometimes, so maybe I'll look into it.

I was there early yesterday buying lobsters. After I placed my order lots of people came in to buy lobsters, the seafood counter was jammed with people buying lobsters and waiting for SR to cook them.

Just a fyi, hardshelled lobsters (with a PricePlus card) are $6.99/lb for 1-1/4 sizes, and they will steam them for you if you call in advance at area Shop Rites. The Marin store also has carried Pepperidge Farm top loading hot dog rolls if you're inclined to make lobster rolls at home.

Just picked up a jar of preserved lemons at Le District in Brookfield Place (nee World Financial Center). They also have some cheeses that are hard to find like Munster and Abondance. If you go, pay attention to the quality of service of counter people and their product knowledge. Then go to Carrino.

I have been experimenting with microwaving fish. I've stuffed whole porgys with ginger and scallions and zap for about 4 minutes. SFSG. I've finished them off with scalding with peanut oil over more ginger and scallions, but I will probably not do that again because the effect is not worth the added calories. I am a big porgy fan because they are cheap, sustainable, delicious and have few bones other than back bones. As an avid cook, I am always intrigued by new ideas and concepts in the kitchen. But, I will say that, in the great sous vide debate, I am more in the camp of not being all that impressed by the end product of this technique. While you achieve good, consistent results every time, I feel that the texture is not quite the way I prefer, particularly for things like meat.

But, that Precision Cooker product you posted has great reviews online, and the NYTimes gave it a good review. In fact, it was chosen as the preferred such tool from a range of sous vide products. Here is a link to their most recent review: NY Times Personal Tech - Sous Vide. Interestingly, I think the concept is very similar to other, older techniques I prefer, but which vary wildly in the process itself, like smoking (as in the Texas-style BBQ cooking process of smoking meats anywhere from 12 to 24 hours, or more!) or crock pot cooking, even.

Hey, if do you end up getting it, please post a follow up review! I am intrigued and may consider getting one myself for things like fish or some vegetables.

I think you can easily buy the chinese bacon and sausage in the fridge (or freezer) section in any supermarket in chinatown. It's pretty common. You may also get them in those restaurants where they hang the BBQ ducks/chickens by the window in the front - I assume those can vary in flavor as they're made "in-house" at those specific restaurants.

For those thinking of doing some heavy winter cooking, I tripped over trotters in the frozen meat and fish at Key Food. They also have pasteles in the same freezer. Ask the butcher how long to boil the pasteles, I think 45 minutes.

Most health food stores that carry face- and body care products will have some Weleda products, try the health food store on Newark by Barrow, or Basic in Hoboken. If they don't have it, most likely Whole Foods or places like Lifethyme (6th Ave & 9th St) in the city could have it.

Looking for a place to buy non ultra heat pasturized heavy cream. Not really interested in raw milk, but want a cream with a little more flavor for butter making. Any dairy co-ops or stores that sell this? Thanks

D'Artagnan makes andouille. I have seen it at both Key Food and Shop-Rite. I don't know what American Boudin is, but if it is like Boudin Blanc, a German Weisswurst is a good substitute.
