That's a great video - I'm really impressed how much pride he takes in his food, and how proud he is of his food (and coming through in a very humble, natural way). Looks like a great guy! I haven't been to the place yet, but after the video, I'm definitely going to try.

I am bumping this thread up so you all can see this neat video about Razza's bread and butter plate. It's seriously one of the best things on the menu, even at $4.

The video looks great too and Dan Richer has a great personality.

I like Razza, but since I'm part time local to the chef's other place in Maplewood, Arturo's, I go there more often as it's a byob. I tell them not to overly char the pizza's at both places otherwise they can be too 'done' on the bottom for me.

Went there yesterday and it was packed and we had to wait for half an hour. This place is indeed a hit with people because of their good food.

Mark, just curious which pie you had? I find the mai pie and margherita
to be a little lackluster, but the cinghale, santo, tartufo (RIP), and whatever the special is are usually fantastic. Hope that helps!

Also, the meatballs and the bread with ricotta are fantastic.

I've been here twice for dinner. The pizza is great and the salads are as well - both had great combinations. The bread and butter is amazing as are the meatballs. The cocktail menu looks really interesting, but I just had wine.

I live in Hamilton Park and frequent Rustique from time to time. Rustique is good, but I think Razza makes a different kinda of pizza, the kind that I prefer. Add to that a great drink menu and a comfortable, casual atmosphere, and I think you have a winner.

If you can replicate the pizza made at razza's at home with a conventional oven, I applaud you and will give you everything I own.

Mark - You may just not have a palate for quality food bc you are used to foods high in sodium an sugar as are most people in this country.

Razza's pizzas are very similar to the way pizza is made in italy. Even though this is all subjective, to say their pizzas aren't good is false.

I didn't know Roman Nose did pizza. I'm more of a sauce man with pizza - if the sauce has good flavor then I'm sold.

Mark, i feel the same... the bread is too chewy and doughy feeling for me... but that's just me. To each his own. However, I enjoy its ambience and proximity. I like the pizza crust at Roman Nose much more. Yum.

In Jersey City, there is no "excellent", however as far as that style of pizza goes, Rustique is the best I've tried in the area.

Moreover, I suppose those pizzas taste like what I can make from scratch at home, so to pay for them seems crazy. Plus just found Razza's pizza bland, despite all the ingredients on it (I had the Santo).

I'd say give them one more try. Maybe you got them on a bad day, because I find their pizza and other dishes to be phenomenal.

Mark, that's surprising. Just out of curiosity, can you name a venue that makes pizza that you would consider excellent? Razza's pizza, and all Neopolitan style pizzas, in my opinion appeal to a different palate than a NY pizza slice joint. I enjoy both, but both are quite different.

I have no affiliation with the restaurant in even the slightest way; I'm just a pizza fanatic and I find Razza's offering to be pretty close to lightning in a bottle.

I feel like I'm in a bizarro Jersey City with the reviews of this place. I went there, ordered the ridiculous $18 pizza, had a couple glasses of wine, and will never return.

I went because it was voted as one of the best pizza places in the country so I had to see what the fuss was. The staff was very friendly, no problems there, but the pizza was nothing remotely close to writing home about.

Maybe something is wrong with me if everyone loves it so much. My friend wasn't impressed either, so maybe I'm not totally crazy.

I hope the best of success to them, but I just don't get it.

Their dough really is what makes their pizza magical. It's probably the best pizza crust I've ever had. Nice to read about how much care they take and the pride they have in how they source their ingredients.

More and more restaurants are opening in JC where the owners and chefs look at what they do as art, and it's really awesome.

I was recently able to hang out with Dan Richer and get him to answer our "3 questions with..." series.

His response about what to eat and then description of how they made the dough is incredible...

"We make our own bread. I've been studying bread making and dough fermentation for years now, all in the pursuit of making a great pizza crust. We use a mix of locally milled wheat from Clifton and locally grown rye from Bucks County, Pennsylvania. It is fermented naturally with the help of our continuously fermenting starter culture that I cultivated from wheat berries grown on a family farm in Hunterdon County. This culture of wild yeast and good bacteria is the essence behind much of what we do at Razza (and at Arturo's). The bread is baked in our wood fired oven everyday just before dinner service at 4 pm."

Mai pie and farm pie are great. Meatballs are excellent and you'll need bread to mop up the sauce. Small but interesting beer selection. Small and less interesting wine selection.

We'll be back!

I've eaten here twice and probably tried every pie. The food is delicious. The wine list is small, but solid.

Something that I think speaks to the quality of the ingredients they're using and creative culinary confidence is their pumpkin pie pizza. Personally, I don't typically liked pumpkin flavored foods, but somehow they managed to make a delicious pumpkin pie pizza.

This place would be a welcome addition to any neighborhood - glad they're in Jersey City.

Not an extensive menu, but it works. The food was delicious. We had the special farmers salad, the chickpeas, the margharita pizza and the pizza with the meat and mushrooms (I forget the name). Yum!

I went by the other night and I think it fills a pizza niche. No other place in JC does that burnt crust as good. In addition, the food comes out the fastest compared to any sit down place I've been around here. Great salad, crostinis, etc.

I checked this out last night and I was favorably impressed by everything about the experience. The freshness and quality of the food was complimented by the friendly, courteous and prompt service. I had a "pumpkin pie" pizza which very nicely showcased this season's available produce. The owner stopped by and chatted with us and he definitely knows what he is doing with this place. His focus on local, sustainable farming sources isn't just commendable from an ethical standpoint, I think it is a huge part of what will draw in customers in a downtown JC market that already has plenty of pizza options. I will definitely be going back here often to try everything on their menu. If you go, certainly don't miss out on the meatballs!

So if this place is now just a pizza joint with beer and wine, did they sell the full liquor license?

They would have to be nuts not to, those go for an ungodly amount of money. And if they did, it means there is at least an opportunity for a new bar to open.

Not much of a bar anymore, just beer and wine, the beer list was very limited but good. I think it's a shame that they covered over some of the historic aspects of the interior with boring sheetrock. No artwork or anything to add to the ambiance. The pizza is quite good in my opinion.

I liked it better as a bar but it was never run well back then, the original place had great potential that none of the owners were able to tap into.
