Regarding the gluten, I overheard the owner say to a customer that they have gluten free.

Went in Saturday morning. It's small. They had 6 people working in that small space. One girl arrived just before me. She ordered two blini. I ordered two blini to stay. There is no air circulation. The place begins to smell and fog up the windows. A gentlemen who just finished his blini left. The table was messy, but no one from the back went to wipe the table down. Client eats, departs, employee must immediately clean and wipe table down. Especially since this gentlemen spilled all kinds of sauces.

The blini took too long for blini. The blini itself was cold, not hot like blini should be. I wouldn't take it to go otherwise it would be cold. Not the food, but the blini itself. I may try the savory sometime, but not the czar something and the salmon one either. Service was friendly enough, but I think they will have a rough go at it.

The space is pretty tiny. I believe they have just two griddles. It wouldn't make sense to decrease their operating capacity by 50% to handle the off chance they need to serve the single digit percentage which suffers from celiac.

Why? To stay in business... I?m no proponent of the GF fad but I do think it?s a missed opportunity to cater to the DT crowd of such persuasion (plus the marginal group of customers with actual celiac disease).

Why accommodate another useless fad? Only 1% of the US population is estimated to have celiac disease, while some studies estimate that ~6% of the US population may suffer NCGS. Not sure why anyone would think a restaurant should alter their offerings to satisfy a tiny minority, but hey... GF living for life!

Usually made from wheat flour, and occasionally buckwheat. I've always had them made from flour. Pretty excited to check the place out.

I just popped into Dolya this morning on my errand run. Tiny cafe, very friendly staff...and here's the menu. The place looked clean and smelled great.
