This whole "artisanal" BS food trend needs to stop. BBQ in its essence IS ARTISANAL. The amount of time the food takes to cook, the delicate mix of spices for the rubs, the tending of the fire.
Now look what Hamilton Pork has done here: Here are your FOUR RIBS, here is your SCOOP of mac n' cheese. Look how delicate your plate is, oh so delicate, the balance, so artisanal, are you enjoying the atmosphere, it's reclaimed wood, very artisanal. Do you like the butcher paper, very authentic. This is insulting the the BBQ experience. BBQ is about eating big, big portions, over abundance. It's the reason why people with weak stomachs don't like BBQ "ewewew, it's SO MUCH FOOD" You aren't expected to eat all of it, your expected to share it. This is exactly the execution I was expecting from The Hamilton Inn and I feel bad for the people who are about to be let down, again.

Texas should be mesquite and oak. And if there are no beef ribs or brisket, it isn't Texas.

Ok so I've read one person describe it as Texas style, but no mention of hot links or brisket. Also the style of sauce is not mentioned either.
Anyone know what type of wood they're using?

The photos in the article did not look appetizing at all. They had the look of boiled and oven roasted ribs, not BBQ. Where's the rub and the bark?
This is what ribs should look like, and even this is a little light. They need a real pitmaster.

You clearly don't know Chama. There are people who are trying to put a positive attitude on their live and always counting their blessings in small and big ways. But strangely other people have a way of turning it negative as a systematic way. I guess it helps them feel better about themselves and give them a sense of control on the description of reality around them.
For the record I went to Hamilton Pork during the deep freeze. I liked the layout which is somewhat in between Porta and South House. The music was great. Portions were a little bit on the smaller side but very tasty to me. I agree that they might benefit from expanding their beer section. I will be back for sure.

I like it. It's a bit expensive (unless you get the #2 special, which is two meats and two sides for $19. They're removing it because they messed up on the pricing).
I've had the ribs, which were pretty good and the lamb belly, which was fantastic. The beans were pretty awful, the mexican corn was blah and the sweet potatoes were average. The dessert ice cream sandwich was very nice. I'll definitely go back and if they keep the pricing on the #2 special I'll go back a lot. They could use a better beer menu though.

I usually like chickpea's articles but this time, she used an expletive that i was shocked to read as in "f....ing amazing" or something like that.

I checked it out last weekend with some friends. Seems to be Texas style BBQ.
Ribs were good, but not great. The wife said the chicken was good. Small selection of beers on tap. Interior design is cute and works well with the space. Potions are a little small though. Half order of ribs is (4) ribs, and the whole order is (8) ribs. I was expecting a full rack when I ordered the whole ribs. I think they have a few kinks to work out, but overall I would recommend people give it a shot.
