Would adding lemon or lime to that Thai tamarind paste work?
How about an unripe mango? Easy to find.

I tried boiling the thai tamarind paste I found, but it's got a bit of sweetness that wouldn't taste right in sinigang.

Inquiring minds want to know: what do you do with Unripe Tamarind? I like tamarind for it’s tangy sweet taste and I have used it to marinade chicken. The pulp is delicious but problematic since it just isn’t in a convenient form. I love the odd blobby seeds, no two are ever alike.
I know all the Indian stores on Newark have multiple forms of Tamarind, in pulp form, concentrated extract and in the odd pea pod form right off the tree.

Try the Vietnamese store next to Nha Trang (formerly Miss Saigon) on Newark Ave.
