Inquiring minds want to know: what do you do with Unripe Tamarind?

I want to make sinigang, a filipino stew that's ridiculously sour and delicious. I usually use sinigang powder mix which is made from unripe tamarind, but I wanna try making it with the real thing. See Anthony Bourdain's trip to the Philippines: http://www.youtube.com/watch?v=bac8bxPrSHw#t=1m33s (that province I guess uses guava, but others use tamarind)

I tried boiling the thai tamarind paste I found, but it's got a bit of sweetness that wouldn't taste right in sinigang.

Hello,

Where can I buy unripe tamarind? I tried New Khan Grocery on Grove St but they only had ripe tamarind.
