Would adding lemon or lime to that Thai tamarind paste work?
How about an unripe mango? Easy to find.


The Filipino link was very interesting...and mouthwatering, especially that crab back.

I want to make sinigang, a filipino stew that's ridiculously sour and delicious. I usually use sinigang powder mix which is made from unripe tamarind, but I wanna try making it with the real thing. I'd try Patel's cash and carry on newark ave. when i can't find anything in little india,I've asked the guys at rahbog sweets. they've been helpful and knowledgeable about their neighbors.

Inquiring minds want to know: what do you do with Unripe Tamarind? I like tamarind for it?s tangy sweet taste and I have used it to marinade chicken. The pulp is delicious but problematic since it just isn?t in a convenient form. I love the odd blobby seeds, no two are ever alike.
I know all the Indian stores on Newark have multiple forms of Tamarind, in pulp form, concentrated extract and in the odd pea pod form right off the tree.
