There is a wonderful company based here in Jersey City called Kozy
Events. http://www.kozyevents.com/cfiles/home.cfm It's owned and operated by Deborah Kozy and her sister-in-law Lauren. They do VERY beautiful weddings and can implement any plan you wish. I HIGHLY recommend them.
