Cheese labs. We just bought a place here in JC, and our real estate agent didn't mention this was a haven for underground cheesers. Now I know why my basement smells vaguely of cheddar and the owner was so desperate to sell. How do you clean up a former cheese lab? Should I get some mice?

Repulsive!

I have a funny feeling this kind of corruption goes on more than one would care to know...
I am just hoping the desperate guy doesn't try to sell the mozzarella with the bleach poured on it

Destroy ton of cheese as illegal plant is KO'd

Health inspectors disposed of 2,300 pounds of mozzarella cheese after shutting down an illegal processing plant in the Jersey City Heights yesterday.

"It's not fair what they did to me," said the plant's owner and sole employee, Martin Almazar, of West New York. "I just lost $1,700 worth of merchandise. Right now I'm going crazy."

The operation was being run out of a garage at the back of a parking lot at 158-160 Oakland Ave., said H. James Boor, Jersey City's chief health inspector.

Officials watched as Almazar "voluntarily destroyed" the cheese by pouring bleach on it. It will be disposed of by the Jersey City Incinerator Authority, Boor said.

Boor said his department had received complaints about the plant.

"When we went in, we found it was a garage with an unfinished ceiling, no bathroom facilities, no hand washing facilities and mouse droppings present," Boor said.

The business was also unlicensed and operating in an area not zoned for a food processing operation, he said.

Almazar was issued city fire and zoning violations as well as health violations from the state and local health departments, Boor said.

Almazar added that although he might not have met all of the state health requirements, he thought he wasn't doing anything worse than most businesses.

"I bring you to any restaurant in Jersey City you would see they don't have the facilities that they need," he said. "I didn't do nothing bad for nobody."
