That is pretty much what I do.

Grill: season, coat with corn starch to dry out the surface, then coat in lard or butter. Sear at very high temp (close the lid to keep the flame down). Then shut down the air to the charcoal to lower the heat down to 300 F. Cook until the center is medium rare.

Cast iron pan: Sear in olive oil, butter, garlic, fresh rosemary, and fresh time. After the sear is done, put it in the oven at 300 F until medium rare in the middle.

Slice and serve.

If they're 3" thick you can get the outside to be really charred and crispy, but the inside will be red, medium-rare and really soft and tender. If you like it that way.

I think that's really the best way for porterhouse or ribeye.

I get bone in ribeye steaks from them, cut to 3 inches thick. I stopped buying from Costco because Maloney's quality is better (you pay for it though).

What do you do with 3 inch Ribeyes I usually find 1 1/8 to be a good thickness

If you really want to get top quality beef, go to H-Mart:

321 Broad Ave, Ridgefield, NJ 07657

They have the best marbled beef anywhere, any cut. That Maloney stuff doesn't even come close. It's close to Kobe or Wagyu quality

Fairway on RT46 sometimes has really good deals on whole filets, and they will butcher it into steaks on site if you ask. This time of year prices can be high, as we're close to Xmas. I'd also call 22nd St Butcher Shop in Bayonne besides Maloney's if you want to stay local.
