Inside Dullboy, a Jersey City Cocktail Bar From the Team Behind The Garret

Park & Sixth shuttered its original Jersey City sandwich shop last December, and last week reopened as Dullboy, (364 Grove Street, 201-795-1628) the downtown neighborhood's first legitimate cocktail destination. And while the bar's name is inspired by a line from Stephen's King's The Shining, it's Brian Dowling's cooking that still casts a specter, supplementing a drinks menu developed by his partners in West Village bar, The Garret, with snacks like bacon-wrapped cherry tomato tacos, thick-cut rosemary potato chips, and his latest iteration of a monster burger (this time a double bacon cheeseburger smothered in caramelized shallots).

"I'd been running Brian's marketing for four years, while on the side trying to open a bar in Manhattan and somewhere along the way it made sense to be partners over here," Adam Fulton told the Voice. But the founder of branding agency New Standard wasn't looking to just open an offshoot of The Garret across the river. He says, "For one thing, the Garret doesn't have any food, unless you count the Five Guys burgers downstairs."

The opening food menu is a legacy of Park & Sixth, but Fulton and beverage director Grant Wheeler are determined to test what locals like with an eye toward oysters over fried food, so not to overwhelm the palate.

The "dowling specials" is a reference to menu by chef/owner Brian Dowling.

So I got the following email from being on P&S's mailing list:

there's a new cocktail bar in town.

after park & sixth closed up shop at 364 grove street, the question was what would become of the space? well the answer is here, and for fans of chef brian at park & sixth, you now have another spot to check out.

chef b has partnered with the gents behind the garret in the west village to bring jersey city it's first true cocktail bar. big fancy ice cubes and all that jazz. alongside the boozy drinks is a light menu of dowling specials like the new butcher's cut burger and pretzel bread puffs with mustard butter.

open 5pm till late tuesday through sunday, we'd love for you to come see us this weekend.

Points of note:

-Lack of capital letters. Not sure if they're e.e. cummings fans or if that's the cool new thing.
-They were open last night when I walked by, despite the curtains being drawn. They're really going for that speakeasy look, despite having two huge bay windows and a glass door.
-No clue wtf a dowling special is. Google tells me nothing either.
