Giving Us Their Daily Flatbread New York Times By KELLY FEENEY November 27, 2009 Newark Avenue in the area of Jersey City known as Little India is crowded with confectioners? shops, small groceries and clothing stores selling colorful saris. Here Paratha Junction, a sleek storefront restaurant that opened in May, is already popular for its classic yet modern take on the dense flatbread called paratha. ?People can have parathas here any and every way,? said Satinder Sharma, who opened the restaurant, which seats 40, along with Ajit Bains. They also own another, larger Paratha Junction in Franklin Park as well as two Brick Lane Curry House restaurants in Manhattan. There are various curry dishes on the menu here, too, but the focus is on bread. Paratha Junction has more than two dozen types of golden sweet and savory parathas served straight from the tawa (griddle) and tandoor (oven). Parathas are traditionally made by folding layers of dough brushed with ghee (clarified butter), Mr. Sharma explained, a method that is followed here. But more health-conscious eaters can order parathas made with olive oil, he said. The breads are made with one?s choice of whole wheat, regular or chickpea flour. Most of the parathas are stuffed with some sort of filling, although for breakfast you may just want to order a plain paratha to slather with Amul butter ($2 for paratha; $1 for the butter, served on the side). For lunch or a light dinner, there are more substantial options, like a chicken tikka paratha or cheddar cheese paratha (each $4); other fillings include spinach and cauliflower. Dipping sauces such as mango chutney or yogurt can be ordered on the side ($1 each). For dessert, the jaggery paratha, made with unrefined sugar ($3), is popular.
