This Jersey guy earns a serious living picking weeds for you to eat By Dan Lipow stands in a gravel parking lot at the edge of the woods, trucks roaring by on nearby Interstate 78. Burger King wrappers and cigarette butts litter the ground. "Right here,'' he says, pointing to scattered weeds at the edge of the lot. "Right here, there's four things you can eat." Lipow is a professional forager. That means he picks weeds and fungi for a living. He then sells them to restaurants and at farmers markets. For money. Decent money, apparently. And now, he's walking me through the weeds at the edge of the lot, pointing out the menu items: There's dandelions ("Seven times the phytonutrients of kale!"); burdock (delicious roots); trout lily (bulbs delicious raw) and garlic mustard (tasty greens and spicy roots).
