Thanks All! Particularly psyched to try Cinnamon Snail... had passed by and thought it was a dessert truck, just checked menu online. Looks amazing. If there are more out there please add to the list.

Subia's is the one true vegan spot downtown and the food is fantastic, but the service is incredibly slow. Call and order ahead or stop in to place your order and then take a walk in Van Vorst Park. http://www.subiasorganic.com/

I highly recommend Taqueria Viva Mexico Kitchen Cafe:

Cheese Enchilada (not on the menu) and the huaraches.

Nachos Rancheros are ok as well.

I'd check out the vegetable options at Grand Szchuan and also ask them to make me their mapo tofu without the ground meat.

Edit: I guess you'd want to know if they use meat stock in any of their vegatable dishes.

Personally I think the Cinnamon Snail truck (Vegan) is amazing. One of the best food trucks in NYC that also makes a visit to Redbank and the Jersey City Farmers Market (at Grove Street). You can follow them on twitter @VeganLunchTruck for the days they come to Jersey City.

I really like the veggie platter at Ibby's. There's also the newish place Greene Chutney Grill, which is sort of like an Indian Chipotle, and has nice veg options. And of course little India...I like Sapthagiri a lot.
